Cimarossa Estate Extra Virgin Olive Oil

Cimarossa oil is one of California’s rarest and unique olive oils. It is grown on one of the highest orchards in California at 2,100 feet, planted in red volcanic soil atop Howell Mountain above the Napa Valley. Prized for its world class Cabernet Sauvignons, Cimarossa also imparts its distinctive character to this olive oil.

The hilly areas of Cimarossa with the best southeast and western exposure were planted with five high quality Italian varieties:
Leccino, Frantoio, Taggiasca, Pendolino and Coratina.

Cimarossa means “red hill top.” These are not fertile soils. The olive trees have to struggle to set and mature their fruit. But the climate and soil conditions yield intense flavors. Our oil is very fragrant when poured. It has classic Tuscan characteristics, with a peppery finish and the slight bitterness in the aftertaste always present in the very best Italian oils.
